Fast-casual burritos, but make it Qdoba: New eatery to open in Hillsboro’s Reed’s Crossing

The build-your-own burrito crowd will have another go-to spot in Hillsboro starting this spring.

Qdoba Mexican Eats is set to open its latest Oregon location Wednesday, May 22, in Reed’s Crossing Town Center at 7511 S.E. Blanton St., dishing up a familiar fast-casual menu of burritos, bowls, tacos and more in South Hillsboro.

Founded in 1995 in Denver, the franchise first arrived in Oregon in 2003 under the leadership of Stan Kramer. It’s since expanded to 10 locations around the state — including one in Hillsboro’s The Streets of Tanasbourne.

Doug Kramer, who’s spent over 16 years in the family business, is now at the helm. This latest opening marks the first under QdobaOregon’s new parent company, QMex Ventures, Inc.

“This opening represents both a milestone and a new beginning,” Kramer said in a press release. “We’re proud of our local roots and excited to continue expanding across Oregon with fresh, flavorful food and the same great service our guests have come to expect.”

The Hillsboro restaurant features the brand’s familiar customizable menu — burritos, loaded nachos and rice bowls built to order — and a newly built space designed with speed and comfort in mind.

In typical grand opening fashion, customers can expect first-day festivities: giveaways, special offers and the chance to win burritos for a year.

The Hillsboro opening kicks off a broader expansion for the chain, with four more Oregon restaurants planned for rollout under the QMex Ventures banner.

Qdoba Mexican Eats is one of many businesses making their way to Gramor Development’s Reed’s Crossing Town Center: a new 104,000-square-foot commercial hub spanning retail to fitness.

Touted as one of the largest “master-planned communities” in Oregon, Reed’s Crossing has been in the works for over a decade. Once complete, the city expects it to boast about 4,000 homes and as many as 20,000 residents in South Hillsboro.
